Description
We were commissioned to design a new restaurant for Milas, subsuming 2 existing retail units on Perth High Street, following the success the Milas Dundee (which WPA also undertook).
The design is centred around an open kitchen where food is selected, prepared and cooked on demand in-front of the customer. In this regard it offers perhaps a more innovative approach than that of a conventional restaurant. The proposals would assist in generating an enhanced town centre experience with a defined identity. The new restaurant concept would serve to add a further asset to draw in visitors whom may use the opportunity to visit other hospitality and retail outlets. This policy recognises that a city centre area must be balanced with residential and active commercial uses. We believe the proposals are inline with policy requirements. The shop frontage has been specifically designed to deliver a high quality, restrained aesthetic that integrates well with historical frontages in the area. A limited colour pallete utilizes high-quality materials with long term durability.

Access will be by a single glazed entrance door located in the same position as existing on the righthand unit. The existing left-hand unit doors are to be removed in lieu of a new large format glazed screen. This will provide a clearly defined single point of access and an enhanced external appearance. Large format glazing will enable an active street frontage, with passers by being able to actively view diners and the feature kitchen from the street. Again, this assists to both foster a sense of place and dynamism. Glazed screens will incorporate designed contemporary manifestation to give a high-quality appearance, this bearing the ‘Milas’ branding. The external dining area will be utilized in the summer months and defined with the use of moveable stainless-steel weighted barriers (fabric infill type) in-line with existing premises in the adjacent St Johns Place.
